Preparation
  1. In a bowl, combine the olive oil, soy sauce, lemon juice, minced garlic, honey, black pepper, paprika, and dried thyme. Whisk until well blended.
  2. Take your choice cut of steak (ribeye, sirloin, or flank steak work great) and make shallow cuts across the surface to allow the marinade to penetrate better.
  3. Place the steak in a zip-top bag or shallow dish and pour the marinade over it. Ensure the steak is coated evenly. Seal or cover tightly.
  4. Allow the steak to marinate for at least 30 minutes; for best results, marinate for 4-24 hours.
  5. Preheat your grill or skillet and remove the steak from the marinade, allowing excess marinade to drip off. Cook to your desired doneness, usually 4-5 minutes per side for medium-rare.
  6. Let the steak rest for about 5 minutes before slicing.
  7. Slice against the grain, plate beautifully, and savor every delicious bite.

Notes

Substitutions: If you're out of olive oil, avocado oil makes a fantastic alternative. For a gluten-free version, use tamari instead of soy sauce. Timing: Don’t rush the marinating process. Avoid using acidic ingredients for too long as they can lead to a mushy texture.
