Ingredients
  

Fruits
  • 2 pieces fresh peaches, sliced
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
Salad Base
  • 4 cups spinach or mixed greens
Toppings
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup walnuts or pecans, chopped
Dressing
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Start by rinsing the spinach or mixed greens thoroughly in cold water. Spin them dry in a salad spinner or pat them gently with a paper towel. Place the greens in a large salad bowl as the base for your salad.
  2. Take your fresh peaches and carefully slice them into wedges. Wash the strawberries, remove the stems, and slice them as well. Rinse the blueberries and raspberries under cold water and set them aside.
Combining Ingredients
  1. In the bowl with the mixed greens, gently add the sliced peaches, strawberries, blueberries, and raspberries.
  2. Crumble the feta cheese over the fruit and greens. Then, sprinkle the chopped walnuts or pecans to introduce that much-needed crunch.
Preparing Dressing
  1. In a small bowl, whisk together honey (or maple syrup), lemon juice, and olive oil. Season with a pinch of salt and pepper. Drizzle this dressing over the salad right before serving, and toss gently to coat everything evenly.
Serving
  1. This salad is best served fresh, but you can also prepare the ingredients separately and combine them just before mealtime.

Notes

Use whatever ripe fruits you have on hand! Other stone fruits, like nectarines or apricots, can make delightful substitutions. To keep peaches looking fresh, brush them lightly with lemon juice after slicing. For optimal taste, enjoy your salad immediately after adding the dressing to keep the greens crisp. Craving some protein? Grilled chicken, shrimp, or chickpeas would make excellent additions! The salad is best enjoyed fresh, but can be stored for up to 1 day in an airtight container.
