Ingredients
  

Wet Ingredients
  • 3 ripe bananas 3 ripe bananas, mashed The riper the bananas, the sweeter and moist the muffins will be.
  • 1/3 cup 1/3 cup melted butter Can substitute with vegetable oil if needed.
  • 1 large 1 large egg, beaten
  • 1 teaspoon 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon 1 teaspoon baking soda
  • 1 pinch Pinch of salt
  • 3/4 cup 3/4 cup sugar
  • 1 cup 1 cup all-purpose flour For a richer chocolate flavor, feel free to swap some with whole wheat flour.
  • 1/2 cup 1/2 cup cocoa powder
  • 1/2 cup 1/2 cup chocolate chips For extra indulgence.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the mashed bananas and melted butter until well blended.
  3. Stir in the sugar, beaten egg, and vanilla extract, mixing until combined.
  4. In another bowl, whisk together baking soda, salt, flour, and cocoa powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Place in the preheated oven and bake for about 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For storing, keep muffins in an airtight container at room temperature for up to three days, or freeze for up to three months. Reheat in the microwave for 20-30 seconds or let thaw at room temperature.
