  • 4 boneless, skinless chicken breasts
  • 8 oz Boursin cheese
  • 1 cup spinach, chopped
  • 1 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation
  1. Preheat your oven to 375°F (190°C) while you prepare the chicken.
  2. Place the chicken breasts on a cutting board. Using a sharp knife, carefully create a pocket in each breast — be careful not to cut all the way through!
  3. In a medium bowl, combine the Boursin cheese, chopped spinach, and sun-dried tomatoes. Mix well until everything is evenly distributed.
  4. Generously fill each chicken breast pocket with the creamy Boursin mixture. Use toothpicks to secure the openings if necessary.
  5. In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, then sear each breast for 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken to a greased baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  7. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before slicing to serve.

Notes

Substitute Boursin with a cream cheese and herb blend if necessary. Avoid overcooking the chicken by using a meat thermometer.
