Preparation
- Preheat your oven to 375°F (190°C) while you prepare the chicken.
- Place the chicken breasts on a cutting board. Using a sharp knife, carefully create a pocket in each breast — be careful not to cut all the way through!
- In a medium bowl, combine the Boursin cheese, chopped spinach, and sun-dried tomatoes. Mix well until everything is evenly distributed.
- Generously fill each chicken breast pocket with the creamy Boursin mixture. Use toothpicks to secure the openings if necessary.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper, then sear each breast for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a greased baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before slicing to serve.
Notes
Substitute Boursin with a cream cheese and herb blend if necessary. Avoid overcooking the chicken by using a meat thermometer.
