Ingredients
  

For the Chicken
  • 1 lb chicken thighs, diced Use skinless, boneless thighs for best results.
  • 2 tbsp oil For cooking the chicken.
For the Sauce
  • 1/2 cup soy sauce Low sodium soy sauce can be used.
  • 1/2 cup brown sugar Can substitute honey for a different flavor.
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
For Serving
  • 2 pieces green onions, chopped For garnish.
  • to taste salt and pepper Season according to preference.
  • as needed cups rice To serve with the chicken.

Method
 

Preparation
  1. Dice the chicken thighs into bite-sized pieces.
  2. In a medium bowl, combine soy sauce, brown sugar, minced garlic, and minced ginger.
Cooking
  1. Heat oil in a large skillet over medium heat.
  2. Season chicken pieces with salt and pepper, add to the skillet, and cook for about 5-7 minutes until browned.
  3. Pour the sauce mixture over the chicken and bring to a gentle boil.
  4. Reduce heat to low, allow to simmer for about 10 minutes, stirring occasionally.
  5. Sprinkle chopped green onions on top before serving.
Serving
  1. Serve the Bourbon Chicken over warm rice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat gently on the stovetop to maintain moisture.
