  • 1 lb beef sirloin, thinly sliced
  • 2 stalks lemongrass, trimmed and smashed
  • 4 cups beef broth
  • 1 cup water
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 thumb-sized piece ginger, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Method
 

Preparation
  1. Begin by soaking the rice noodles in warm water for about 10-15 minutes, until they are soft but still slightly firm (al dente).
Cooking
  1. In a large pot, combine the beef broth, water, smashed lemongrass, sliced onion, garlic, and ginger. Bring to a gentle simmer over medium heat.
  2. Once the broth starts to simmer, add the thinly sliced beef into the pot. Allow it to cook for about 5-7 minutes, or until the beef is tender.
  3. Stir in the fish sauce, sugar, and season with salt and pepper to taste. Let it simmer for an additional 2-3 minutes for the flavors to meld.
  4. Add the softened rice noodles to the pot, stirring gently to combine them with the broth and beef. Cook for an additional 2 minutes.
Serving
  1. Ladle the soup into bowls, and garnish with fresh cilantro and lime wedges. Serve hot and enjoy your culinary creation!

Notes

If you prefer a different protein, try chicken or tofu as a Halal-friendly alternative. Avoid skipping the fish sauce—it adds a depth of flavor that transforms your soup!
