- In a bowl, combine the shredded chicken with the BBQ sauce, mixing until well-coated.
- Place a skillet over medium heat to warm up.
Assembly and Cooking
- Spread a little butter on one side of each slice of bread.
- On the unbuttered side, layer half of the cheese, then add the BBQ chicken mixture, and top with the remaining cheese.
- Place the second slice of bread on top, buttered side up.
- Carefully transfer the sandwich to the hot skillet. Grill for about 3-4 minutes or until golden brown.
- Use a spatula to flip the sandwich and grill the other side for another 3-4 minutes until the cheese has melted and the bread is crispy.
