Preparation
- Preheat your oven to 350°F (175°C).
- Grate 2 cups of zucchini and squeeze out excess moisture.
- In a large mixing bowl, combine mashed bananas, eggs, honey or maple syrup, yogurt or applesauce, and vanilla extract. Whisk until fully mixed.
- In another bowl, mix whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the grated zucchini and optional nuts or chocolate chips.
- Grease a 9x5-inch loaf pan or line it with parchment paper.
Baking
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and serve with your favorite toppings.
Notes
Store at room temperature for 3-4 days or freeze slices for up to 3 months. Reheat in the oven at 350°F for about 10 minutes before enjoying.
