  • 1 cup mashed ripe bananas (about 3 large) Ensure bananas are overripe for best sweetness.
  • 2 large eggs
  • 1/4 cup honey or maple syrup Maple syrup adds additional sweetness.
  • 1/4 cup yogurt or applesauce Substitute with non-dairy alternatives if needed.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Filling
  • 2 cups grated zucchini (excess moisture squeezed out) Remove excess moisture for better texture.
  • 1/2 cup nuts or chocolate chips (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grate 2 cups of zucchini and squeeze out excess moisture.
  3. In a large mixing bowl, combine mashed bananas, eggs, honey or maple syrup, yogurt or applesauce, and vanilla extract. Whisk until fully mixed.
  4. In another bowl, mix whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the grated zucchini and optional nuts or chocolate chips.
  7. Grease a 9x5-inch loaf pan or line it with parchment paper.
Baking
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Slice and serve with your favorite toppings.

Notes

Store at room temperature for 3-4 days or freeze slices for up to 3 months. Reheat in the oven at 350°F for about 10 minutes before enjoying.
