Preparation
- Preheat the oven to 350°F (175°C). Grease a 4×8-inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. It’s okay to leave some small chunks for added texture.
- Stir in the melted butter into the mashed bananas until well combined.
- Add the baking soda and a pinch of salt. Mix well.
- Stir in the sugar, beaten egg, and vanilla extract until everything is incorporated.
- Finally, add the flour and mix until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
For a richer flavor, you can substitute some or all of the sugar with brown sugar. Store in an airtight container at room temperature for up to four days, or freeze for longer storage.
