  • 1 loaf challah or brioche bread (cubed) Day-old bread for a fluffier texture is recommended.
  • 6 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup chopped walnuts or pistachios Feel free to mix and match nuts.
  • 1 cup honey
  • 1/2 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large mixing bowl, combine the cubed bread and chopped nuts. Toss them gently to mix.
  3. In another bowl, whisk together the eggs, milk, heavy cream, vanilla extract, cinnamon, and nutmeg until well blended.
  4. Pour the custard mixture over the bread and nuts, making sure all pieces are soaked. Allow it to sit for at least 15 minutes, or overnight in the fridge if preparing ahead.
  5. While the bread soaks, in a small saucepan, combine honey and brown sugar over low heat until melted and syrupy, about 5 minutes.
Baking
  1. Pour the soaked bread into the baking dish and drizzle half of the syrup over the top.
  2. Bake in the preheated oven for about 45-50 minutes until golden brown and puffy.
  3. Once baked, drizzle with the remaining honey syrup, and top with additional nuts, if desired. Serve warm and enjoy!

Notes

For best results, use day-old bread. Allowing the bread to soak overnight will create an even more decadent dish. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
