Ingredients
  

Chicken and Seasoning
  • 1.5 lbs Chicken Breast, cut into bite-sized pieces
  • ½ cup Cornstarch, for coating
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 2 tbsp Vegetable Oil, for cooking
Vegetables and Fruits
  • 1 Green Bell Pepper, diced
  • 1 medium Onion, diced
  • 1 cup Pineapple Chunks, canned or fresh
Sauce
  • ¼ cup Soy Sauce (low-sodium) Choose halal compliant brands
  • cup Honey
  • ¼ cup Rice Vinegar
  • ½ tsp Garlic Powder
  • ½ tsp Ginger Powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
  3. Heat vegetable oil in a skillet over medium heat and sauté the coated chicken until golden brown on all sides, about 5-7 minutes.
  4. In another bowl, combine the soy sauce, honey, rice vinegar, garlic powder, and ginger powder, then mix well.
  5. In a baking dish, layer the sautéed chicken, green bell pepper, onion, and pineapple chunks. Pour the sauce over the top.
Baking
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes to allow the chicken to caramelize.
  3. Allow to cool for a few minutes before serving over rice or steamed vegetables.

Notes

For variations, you can substitute chicken breast for chicken thighs or tofu for a vegetarian option. Ensure even cooking by preheating the oven and avoid overcrowding the baking dish.
