Ingredients
  

For the chicken
  • 4 pieces chicken thighs or breasts
  • 1 cup orange juice (preferably fresh)
  • 1/4 cup soy sauce (ensure it's Halal-certified)
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • to taste Salt and pepper
  • as needed Chopped green onions for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the orange juice, soy sauce, honey, cornstarch, vegetable oil, minced garlic, and grated ginger until well combined.
  3. Add the chicken thighs or breasts to the marinade, ensuring they are fully coated. Let them marinate for at least 30 minutes.
  4. Place the marinated chicken in a baking dish and pour any remaining marinade over the top. Sprinkle with salt and pepper to taste.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  2. For crispy skin, broil for an additional 2-3 minutes at the end.
Serving
  1. Remove from the oven, let it rest for a few minutes, then garnish with chopped green onions. Serve with fluffy rice or steamed vegetables.

Notes

Marinate the chicken for longer for deeper flavor. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months. Reheat in the oven for best results.
