  • 4 pieces chicken thighs Bone-in or boneless, skin-on is preferred.
For the Marinade
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to achieve perfect tender meat and crispy skin.
  2. In a large mixing bowl, combine soy sauce, ketchup, brown sugar, apple cider vinegar, vegetable oil, minced garlic, and grated ginger. Whisk until smooth.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes or overnight for maximum flavor.
  4. Transfer marinated chicken to a baking dish and pour any leftover marinade over the chicken. Season with salt and pepper.
Cooking
  1. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  2. For an extra crispy finish, use the broiler for the last 2-5 minutes, watching closely to avoid burning.
Serving
  1. Once cooked, sprinkle with chopped green onions and serve over rice or alongside steamed vegetables.

Notes

For best results, use bone-in, skin-on chicken thighs. If using boneless, adjust cooking time. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat in the oven to maintain texture.
