  • 4 medium medium potatoes Yukon Gold or Russet recommended
  • 200 g feta cheese Crumbled for topping
  • 2 tablespoons olive oil For coating the potatoes
  • 1 teaspoon dried oregano For seasoning
  • to taste Salt and pepper

  • to taste Fresh parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 200°C (392°F).
  2. Wash and scrub the potatoes thoroughly, then pat them dry and cut them into quarters or wedges.
  3. In a mixing bowl, drizzle the cut potatoes with olive oil and sprinkle with salt, pepper, and dried oregano. Toss well to coat.
Cooking
  1. Transfer the seasoned potatoes to a lined baking tray, ensuring they’re spread out in a single layer.
  2. Crumble the feta cheese over the potatoes, distributing it evenly.
  3. Bake in the preheated oven for 30-35 minutes or until the potatoes are golden brown and crispy, tossing halfway through.
  4. Once cooked, remove from the oven and garnish with freshly chopped parsley if desired. Serve hot.

Notes

For best results, don’t overcrowd the baking tray. Leftover potatoes can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
