Preparation
- Preheat the oven to 400°F (200°C). This is essential for achieving that beautifully crispy chicken skin.
- Pat the chicken breasts dry with a paper towel, then season both sides generously with salt, pepper, and thyme.
Cooking
- In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Toss in the sliced mushrooms and continue cooking for about 5-7 minutes until they are tender and browned.
- Push the mushroom mixture to the side and add the seasoned chicken breasts into the skillet.
- Drizzle the remaining olive oil over the chicken.
- Place the skillet in the preheated oven and bake for 25-30 minutes or until the chicken is fully cooked and registers 165°F (75°C).
- If you’d like an extra crispy top, broil for an additional 2-3 minutes at the end.
