  • 4 pieces boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced (button or cremini work well) about 225g
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • Salt and pepper to taste
  • 1 tbsp dried thyme (or fresh if you have it!)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). This is essential for achieving that beautifully crispy chicken skin.
  2. Pat the chicken breasts dry with a paper towel, then season both sides generously with salt, pepper, and thyme.
Cooking
  1. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Toss in the sliced mushrooms and continue cooking for about 5-7 minutes until they are tender and browned.
  5. Push the mushroom mixture to the side and add the seasoned chicken breasts into the skillet.
  6. Drizzle the remaining olive oil over the chicken.
  7. Place the skillet in the preheated oven and bake for 25-30 minutes or until the chicken is fully cooked and registers 165°F (75°C).
  8. If you’d like an extra crispy top, broil for an additional 2-3 minutes at the end.
Serving
  1. Let the chicken rest for a few minutes before slicing.
  2. Serve it alongside the flavorful mushrooms and enjoy!

Notes

Feel free to switch out the mushrooms for asparagus or spinach for a different flavor profile. Ensure to use a meat thermometer to avoid overcooking the chicken.
