Preparation
  1. Rinse kale under cool water and chop into bite-sized pieces, removing tough stems.
  2. Slice avocado in half, remove the pit, cube the flesh in the skin, and scoop into a mixing bowl.
  3. Juice the lemon and add juice to a small bowl.
  4. In the mixing bowl, combine chopped kale, diced avocado, olive oil, and lemon juice. Season with salt and pepper.
  5. Gently massage the kale and avocado together with clean hands to soften the kale.
  6. Serve immediately for the best texture or chill for up to 30 minutes.

Notes

For substitutes, you can use spinach or arugula for a different flavor. To preserve avocado's freshness, add it just before serving. Leftovers can be stored in an airtight container for up to 2 days, but it's best enjoyed fresh.
