- Rinse kale under cool water and chop into bite-sized pieces, removing tough stems.
- Slice avocado in half, remove the pit, cube the flesh in the skin, and scoop into a mixing bowl.
- Juice the lemon and add juice to a small bowl.
- In the mixing bowl, combine chopped kale, diced avocado, olive oil, and lemon juice. Season with salt and pepper.
- Gently massage the kale and avocado together with clean hands to soften the kale.
- Serve immediately for the best texture or chill for up to 30 minutes.
Notes
For substitutes, you can use spinach or arugula for a different flavor. To preserve avocado's freshness, add it just before serving. Leftovers can be stored in an airtight container for up to 2 days, but it's best enjoyed fresh.
