  • 1 sheet puff pastry Thawed if frozen
  • 1 bunch asparagus, trimmed Wash and trim tough ends
  • 4 oz goat cheese, crumbled Can substitute with feta
  • 2 tablespoons olive oil For drizzling
  • 1 piece egg For egg wash
  • to taste Salt and pepper For seasoning
  • optional Fresh herbs For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick and transfer it to a baking sheet lined with parchment paper.
  3. Score a border about 1-inch from the edge of the pastry without cutting all the way through.
  4. Wash and trim the asparagus, then arrange them evenly over the puff pastry.
  5. Spread the crumbled goat cheese generously over the arranged asparagus.
  6. Drizzle olive oil over the tart and season with salt and pepper.
  7. Beat the egg in a small bowl and brush it over the exposed edges of the pastry.
Baking
  1. Place the tart in the preheated oven and bake for about 20-25 minutes or until golden brown and puffed.
  2. Once baked, allow the tart to cool slightly, garnish with fresh herbs if desired, slice, and serve warm.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (180°C) for 10-15 minutes for best texture.
