Ingredients
  

Pastry and Filling
  • 1 sheet puff pastry (store-bought) Thawed if frozen
  • 1 bunch asparagus, trimmed Fresh asparagus
  • 4 oz goat cheese, crumbled Can substitute with ricotta if desired
  • 1 large egg, beaten For egg wash
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface to fit your tart pan. Transfer it to the pan and trim any excess dough.
  3. In a bowl, toss the trimmed asparagus with a drizzle of olive oil, salt, and pepper.
  4. Sprinkle the crumbled goat cheese over the puff pastry evenly, leaving a small border around the edges.
  5. Lay the seasoned asparagus on top of the goat cheese in a visually appealing manner.
  6. Use the beaten egg to brush the edges of the puff pastry.
Baking
  1. Place the tart in the oven and bake for 25-30 minutes, or until the pastry is golden and puffed, and the asparagus is tender.
Serving
  1. Allow the tart to cool slightly before slicing. Serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Can be frozen before baking for up to a month.
