Apple Salad with Honeycrisp Apples

A light, crisp, and flavorful salad made with sweet Honeycrisp apples, crunchy nuts, tangy cheese, and a simple homemade dressing. Perfect as a refreshing side dish or a quick, healthy lunch!

Ingredients
  

  • For the Salad:
  • 2 Honeycrisp apples thinly sliced
  • 4 cups mixed greens spinach, arugula, or spring mix
  • ¼ cup crumbled feta or goat cheese
  • ½ cup candied pecans or walnuts
  • ¼ cup dried cranberries
  • ¼ red onion thinly sliced (optional)
  • For the Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well blended.
  2. In a large salad bowl, combine mixed greens, apple slices, nuts, cranberries, cheese, and red onion.
  3. Drizzle dressing over the salad and toss gently to coat evenly.
  4. Serve immediately for the freshest flavor and crunch.

Notes

To prevent apple slices from browning, toss them in lemon juice before adding to the salad.
Add grilled chicken or turkey for a protein-packed meal.
Substitute blue cheese or shaved Parmesan for a different flavor profile.
The dressing can be made ahead and stored in the fridge for up to 5 days.
