Preparation
- Preheat your oven to 350°F (175°C).
- Grease a standard 9x5 inch loaf pan with cooking spray or butter and sprinkle a bit of flour.
Mixing
- In a large bowl, combine the dry ingredients: oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until blended.
- In a separate bowl, beat together the brown sugar, granulated sugar, egg, applesauce, and milk.
- Add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the chopped apples and walnuts or pecans if using.
Baking
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use fresh ingredients for the best flavor. Adjust sweetness by adding more sugar if desired. Store wrapped in plastic wrap or in an airtight container at room temperature for 3-4 days, or freeze slices for up to three months.
