Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, baking powder, and salt. Stir until evenly distributed.
- Pour in the unsweetened applesauce, honey or maple syrup, and vanilla extract, mixing until well combined.
- Gently fold in the chopped apples and nuts (if using) until everything is incorporated.
- Pour the mixture into the prepared baking pan and press it down evenly with a spatula.
- Bake for about 25-30 minutes or until the edges are golden brown.
- Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper. Allow to cool completely on a wire rack before slicing into bars.
Notes
Store bars in an airtight container at room temperature for about 4-5 days or refrigerate for up to a week. For longer storage, wrap individual bars in plastic and freeze for up to three months.
