  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup Use honey for a sweeter bar, or maple syrup for a vegan option.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped apples (fresh or dried)
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans) Can be omitted for nut-free bars.
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, baking powder, and salt. Stir until evenly distributed.
  3. Pour in the unsweetened applesauce, honey or maple syrup, and vanilla extract, mixing until well combined.
  4. Gently fold in the chopped apples and nuts (if using) until everything is incorporated.
  5. Pour the mixture into the prepared baking pan and press it down evenly with a spatula.
  6. Bake for about 25-30 minutes or until the edges are golden brown.
  7. Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper. Allow to cool completely on a wire rack before slicing into bars.

Notes

Store bars in an airtight container at room temperature for about 4-5 days or refrigerate for up to a week. For longer storage, wrap individual bars in plastic and freeze for up to three months.
