Ingredients
  

Dry Ingredients
  • 2 cups rolled oats Use certified gluten-free oats if required.
  • 1 cup flour (whole wheat or all-purpose)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon Plus more for sprinkling on top.
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar Packed.
Wet Ingredients
  • 1/3 cup maple syrup or honey Choose maple syrup for a vegan version.
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1-2 pieces apples, diced Choose sweet or tart apples based on preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, flour, baking powder, baking soda, cinnamon, and salt. Whisk well.
  3. In a separate bowl, mix the brown sugar, maple syrup (or honey), applesauce, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined.
  5. Gently fold in the diced apples.
Baking
  1. Line an 8x8-inch baking dish with parchment paper and pour the mixture into the pan. Spread it evenly and press it down gently.
  2. If desired, sprinkle a little extra cinnamon on top.
  3. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  4. Allow the bars to cool completely in the pan. Once cooled, lift them out using the parchment paper, slice into bars, and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to 3 months. To reheat, microwave for 15-20 seconds or warm in a 350°F oven for about 5 minutes.
