Method
Preparation
- In a large mixing bowl, combine the flour, sugar, yeast, and salt.
- In a separate bowl, whisk together the warmed milk and eggs.
- Pour the liquid mixture into the dry ingredients, followed by the softened butter. Mix until a dough forms.
Kneading
- Turn the dough onto a floured surface and knead for about 10 minutes until it’s smooth and elastic.
First Rise
- Place the dough into a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm area for about 1 hour, or until it doubles in size.
Prepare Filling
- While the dough is rising, combine the diced apples, cinnamon, and brown sugar in a bowl. Set aside.
Shaping
- After the first rise, punch the dough down and roll it out into a rectangle. Layer the apple filling evenly across the dough.
- Roll the dough tightly into a log and slice it lengthwise to expose the filling. Twist the two halves around each other and form it into a braided loaf.
Second Rise
- Place the loaf in a greased loaf pan, cover it, and let it rise for another 30-45 minutes.
Baking
- During the second rise, preheat your oven to 350°F (175°C).
- Bake the babka in the preheated oven for about 30-35 minutes, or until golden brown. Let it cool slightly before serving.
Notes
For flour alternatives, consider using whole wheat or gluten-free flour but adjust the liquid accordingly. Avoid overbaking to prevent dryness, and consider topping with icing or nuts for variations.
