  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk, warmed
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
Filling Ingredients
  • 1 cup apples, peeled and diced
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt.
  2. In a separate bowl, whisk together the warmed milk and eggs.
  3. Pour the liquid mixture into the dry ingredients, followed by the softened butter. Mix until a dough forms.
Kneading
  1. Turn the dough onto a floured surface and knead for about 10 minutes until it’s smooth and elastic.
First Rise
  1. Place the dough into a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm area for about 1 hour, or until it doubles in size.
Prepare Filling
  1. While the dough is rising, combine the diced apples, cinnamon, and brown sugar in a bowl. Set aside.
Shaping
  1. After the first rise, punch the dough down and roll it out into a rectangle. Layer the apple filling evenly across the dough.
  2. Roll the dough tightly into a log and slice it lengthwise to expose the filling. Twist the two halves around each other and form it into a braided loaf.
Second Rise
  1. Place the loaf in a greased loaf pan, cover it, and let it rise for another 30-45 minutes.
Baking
  1. During the second rise, preheat your oven to 350°F (175°C).
  2. Bake the babka in the preheated oven for about 30-35 minutes, or until golden brown. Let it cool slightly before serving.

Notes

For flour alternatives, consider using whole wheat or gluten-free flour but adjust the liquid accordingly. Avoid overbaking to prevent dryness, and consider topping with icing or nuts for variations.
