Dry Ingredients
  • 2 cups all-purpose flour Make sure it's fresh.
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon Plus extra for sprinkling.
Wet Ingredients
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups peeled and diced apples Granny Smith or Honeycrisp work great.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, salt, and ground cinnamon. Stir to blend evenly.
  3. In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix; it’s fine if there are a few lumps!
  5. Gently fold the diced apples into the batter until they are evenly distributed.
  6. Transfer the batter into the prepared loaf pan and smooth the top. Sprinkle with a bit more cinnamon for extra flavor.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it onto a wire rack. Once cool enough to handle, slice and enjoy!

Notes

Try experimenting with different apple varieties and add nuts like walnuts or pecans for extra crunch. Store the bread in an airtight container at room temperature for 3-4 days, or refrigerate for up to a week or freeze for up to 3 months. Reheat slices in the microwave or place the whole loaf in a preheated oven.
