- In a large mixing bowl, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Whisk thoroughly until the chia seeds are evenly distributed throughout the liquid.
- Allow the mixture to sit for about 5 minutes. This is when the magic begins as the chia seeds begin to swell, creating that beautiful pudding texture.
- After 5 minutes, give the mixture another good stir to break up any clumps of chia seeds that may have formed.
- Divide the chia pudding into individual serving containers, preferably mason jars, and place them in the refrigerator. Chill for at least 2 hours, or overnight for best results.
- While the pudding sets, toast your chopped almonds in a small skillet over medium heat until they are golden and fragrant. Set aside to cool.
- Once chilled, top your pudding with shredded coconut, toasted almonds, and an extra drizzle of maple syrup if desired. Serve cold and enjoy every creamy bite!
Notes
For best results, allow your chia pudding to sit overnight for richer flavors. Store in airtight containers for up to 5 days.
