Ingredients
  

For the pudding
  • 1/4 cup chia seeds
  • 1 cup almond milk (unsweetened)
  • 2 tablespoons maple syrup or honey (optional, adjust to taste) Taste before adding.
  • 1/4 cup shredded coconut (unsweetened)
  • 2 tablespoons cocoa powder (unsweetened)
  • 1 teaspoon vanilla extract
For topping
  • to taste sliced almonds For topping.
  • to taste additional shredded coconut and cocoa For garnish (optional).

Method
 

Preparation
  1. In a medium bowl, whisk together the chia seeds, cocoa powder, and shredded coconut.
  2. Pour in the almond milk, maple syrup (if using), and vanilla extract. Mix well until all ingredients are well incorporated.
  3. Allow the mixture to sit for about 5 minutes, then stir again to prevent clumping of the chia seeds.
  4. Cover the bowl with plastic wrap or transfer the mixture to individual serving jars. Refrigerate for at least 2 hours, or overnight, to allow the pudding to thicken.
  5. Once set, give the pudding a good stir and top with sliced almonds, additional shredded coconut, and a sprinkle of cocoa if desired. Enjoy your healthy dessert!

Notes

Adjust sweetness to taste and experiment with different toppings or flavors. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to a month.
