Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, combine the almond flour, powdered sugar, baking powder, and a pinch of salt. Stir until fully incorporated.
  3. In another bowl, beat the egg whites until they form soft peaks.
  4. Gently fold the egg whites into the almond flour mixture, then add the vanilla extract, mixing until just combined.
  5. Using a cookie scoop or two spoons, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for about 15-20 minutes or until the edges are slightly golden. The centers may look a little soft.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to five days. For longer storage, freeze in a single layer with parchment paper between layers for up to three months.
