Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, combine the almond flour, powdered sugar, baking powder, and a pinch of salt. Stir until fully incorporated.
- In another bowl, beat the egg whites until they form soft peaks.
- Gently fold the egg whites into the almond flour mixture, then add the vanilla extract, mixing until just combined.
- Using a cookie scoop or two spoons, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake for about 15-20 minutes or until the edges are slightly golden. The centers may look a little soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to five days. For longer storage, freeze in a single layer with parchment paper between layers for up to three months.
