Preparation
- Be by washing and halving the baby potatoes. If they are larger, quarter them.
- In a large mixing bowl, combine the olive oil, minced garlic, salt, pepper, and dried Italian herbs if using. Toss in the halved potatoes to coat evenly.
- Preheat your air fryer to 400°F (200°C).
Cooking
- Place the potatoes into the air fryer basket in a single layer. Air fry for about 15 minutes, shaking the basket halfway through.
- After 15 minutes, sprinkle grated Parmesan cheese over the potatoes. Continue air frying for an additional 3-5 minutes, until the cheese is melted and bubbly.
- Remove the potatoes from the air fryer, and serve hot. Garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes. Using the microwave is also an option but may lose some crunch.
