Ingredients
  

Base Ingredients
  • 2 cups cereal (like Rice Krispies or any puffed cereal)
  • 1/2 cup peanut butter (creamy or chunky) Can substitute with sun butter or soy nut butter for nut-free option.
  • 1/4 cup honey or agave syrup Use maple syrup for a vegan option.
Optional Mix-ins
  • 1/2 cup mini chocolate chips Optional
  • 1/4 cup dried fruit or nuts Optional

Method
 

Preparation
  1. Grab an 8x8 inch pan and line it with parchment paper or lightly grease it with a bit of oil.
  2. In a medium saucepan over low heat, combine the peanut butter and honey. Stir continuously until melted and well combined, about 2-3 minutes.
  3. Remove from heat and add the cereal, stirring until every piece is coated evenly.
  4. If using, fold in the chocolate chips or dried fruits/nuts gently into the cereal mixture.
  5. Transfer the mixture into the lined pan and press firmly with a spatula or your hands to ensure the bars hold together.
  6. Chill in the refrigerator for at least 30 minutes to set.
  7. Once set, lift the bars out using the parchment paper and cut into squares or rectangles.

Notes

Store in an airtight container at room temperature for up to a week. Refrigerate for up to two weeks or freeze for up to three months. Thaw at room temperature for 15-20 minutes or microwave for about 10 seconds before serving.
