Preparation
  1. Soak the pitted Medjool dates in warm water for about 10 minutes to soften them.
  2. Drain the dates and transfer them to a high-speed blender. Add the water, vanilla extract, and sea salt. Blend until smooth and creamy.
  3. If the sauce is too thick, add a tablespoon of water at a time until you reach your desired consistency.
  4. Taste the caramel and adjust sweetness by adding more dates or a hint of honey if desired.
  5. Pour the sauce into a jar or container with a lid and refrigerate. It can be stored for up to a week.

Notes
