  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper sliced (any color)
  • 2 cups mixed vegetables (carrots, peas, and corn)
  • 2 cups cooked rice or quinoa
  • 1 can (15 oz) diced tomatoes (no salt added)
  • 1 tsp cumin
  • 1 tsp paprika

Method
 

Preparation
  1. Start by chopping the chicken, onion, and bell pepper, and mincing the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium heat until it shimmers but does not smoke.
  2. Add the onions and garlic to the skillet and sauté until the onions become translucent, about 2-3 minutes.
  3. Add the chicken pieces to the skillet and cook until they are lightly browned and cooked through, about 5-7 minutes. Season with salt, pepper, cumin, and paprika.
  4. Stir in the diced tomatoes and mixed vegetables. Bring to a simmer and cook for another 5-7 minutes until all vegetables are tender.
  5. Serve over cooked rice or quinoa and garnish with fresh coriander if desired.

Notes

Substitutions: If you're out of chicken, feel free to substitute with halal ground beef or tofu for a plant-based option. Always prep your ingredients beforehand to minimize cooking time. Don't skip on seasoning; a well-seasoned dish shines! Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat on the stovetop or in the microwave with a splash of water.
