Ingredients

  • 1 1/2 cups cottage cheese
  • 1/2 cup canned pumpkin puree
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 small pinch salt
  • 1/4 cup granola or pepitas for topping
  • 1/4 teaspoon ground cinnamon for dusting

Method

  1. Add base ingredients: Place cottage cheese, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt into a blender or food processor.
  2. Blend until smooth: Blend on high for 60 to 90 seconds, until the mixture turns pale orange, airy, and completely smooth with no visible curds.
  3. Scrape and re-blend: Stop and scrape down the sides of the blender, then blend again for 10 more seconds to catch any unblended bits.
  4. Taste and adjust: Taste the whipped mixture and stir in a little more maple syrup or spice if you'd like it sweeter or warmer.
  5. Divide into bowls: Spoon the whipped pumpkin cottage cheese into two bowls and smooth the tops with the back of a spoon.
  6. Add toppings: Sprinkle granola or pepitas over each bowl and dust lightly with ground cinnamon.
  7. Serve immediately: Serve right away while the texture is cold and fluffy, before the mixture has a chance to settle.
